Dans un moulin \u00e0 \u00e9pices, r\u00e9duisez le zeste en poudre. R\u00e9servez 1 cuill\u00e8re \u00e0 caf\u00e9 de poudre d&rsquo;agrumes pour la d\u00e9coration. M\u00e9langez le sel, la cassonade, le zeste d&rsquo;orange et la poudre d&rsquo;agrumes dans un bol moyen.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>\u00c9talez un carr\u00e9 de film alimentaire de 30\u00a0x\u00a030\u00a0cm sur un plan de travail. Placez 1\/3 du m\u00e9lange de sel au centre du film, puis d\u00e9posez le filet de b\u0153uf par-dessus. Placez le reste du m\u00e9lange de sel sur le dessus et les c\u00f4t\u00e9s du filet de b\u0153uf, en appuyant pour le couvrir compl\u00e8tement. Enveloppez fermement le film alimentaire autour du b\u0153uf et fermez le bien. Placez le b\u0153uf dans un sac en plastique (de type Ziplock) et fermez le sac. Placez le b\u0153uf au r\u00e9frig\u00e9rateur et laissez-le s&rsquo;impr\u00e9gner du sel 24 heures, en retournant toutes les 8 heures. Retirez le filet de b\u0153uf du film alimentaire, puis brossez-le pour retirer le sel.
