Commencez par d\u00e9couper l\u2019espadon en tranches tr\u00e8s fines. Astuces : vous pouvez placer l\u2019espadon 20 min au cong\u00e9lateur pour vous aider \u00e0 r\u00e9aliser des tranches plus fines ou vous pouvez aussi opter pour une d\u00e9coupe en petits d\u00e9s.<\/p>\r\n\r\n\r\n\r\n<p>2. Placez les tranches dans un plat creux.<\/p>\r\n\r\n\r\n\r\n<p>3. \u00c9pluchez et ciselez en fines lamelles \u00bc de l\u2019oignon rouge puis d\u00e9coupez en petits cubes votre piment.<\/p>\r\n\r\n\r\n\r\n<p>4. Pr\u00e9levez un quartier de pamplemousse de Floride pour en r\u00e9cup\u00e9rer le jus et d\u00e9coupez le pamplemousse de Floride en supr\u00eames. Versez-en une partie sur le poisson puis rajoutez les oignons cisel\u00e9s, 4 cuill\u00e8res \u00e0 soupe d\u2019huile d\u2019olive et le piment. Salez et poivrez puis recouvrez d\u2019un film et placez au frigo 10 minutes.<\/p>\r\n\r\n\r\n\r\n<p>5. Pr\u00e9parez un guacamole en \u00e9crasant l\u2019avocat avec le reste du jus de pamplemousse de Floride, la moiti\u00e9 des feuilles du bouquet de coriandre, l\u2019huile piquante puis salez et poivrez.<\/p>\r\n\r\n\r\n\r\n<p>6. Ciselez tr\u00e8s finement l\u2019autre partie de l\u2019oignon rouge et rajoutez-le. Ajustez l\u2019assaisonnement selon votre go\u00fbt.<\/p>\r\n\r\n\r\n\r\n<p>7. Dans une po\u00eale, faites chauffer un fond d\u2019huile de tournesol. D\u00e9coupez les tortillas en petites parts et faites-les dorer. D\u00e9barrassez-les sur du papier absorbant d\u00e8s coloration.<\/p>\r\n\r\n\r\n\r\n<p>8. Dressez le poisson dans les assiettes et rajoutez de la coriandre fra\u00eeche.<\/p>\r\n\r\n\r\n\r\n<p>9. R\u00e9partissez la marinade dans chaque assiette puis le guacamole.
