Salez et poivrez au go\u00fbt.<\/p>\r\n<p>&nbsp;<\/p>\r\n<p>Pr\u00e9chauffez votre four \u00e0 300 \u00b0F (150 \u00b0C).<\/p>\r\n<p>&nbsp;<\/p>\r\n<p>Badigeonnez la face la plus charnue de la viande avec la marinade.<\/p>\r\n<p>&nbsp;<\/p>\r\n<p>D\u00e9roulez une longue feuille de papier aluminium et d\u00e9posez-y les tranches de pamplemousse puis la viande c\u00f4t\u00e9 marinade. \u00a0<\/p>\r\n<p>&nbsp;<\/p>\r\n<p>Enduisez d\u2019huile le c\u00f4t\u00e9 avec la peau. Rabattez les c\u00f4t\u00e9s du papier aluminium pour qu\u2019il prot\u00e8ge la viande lors de la cuisson. La peau doit rester \u00e0 d\u00e9couvert.<\/p>\r\n<p>&nbsp;<\/p>\r\n<p>Versez le jus des pamplemousses de la Floride dans la feuille d\u2019aluminium afin qu\u2019il imbibe la viande pendant la cuisson.\u00a0Enfournez le tout pour une dur\u00e9e d\u2019une heure trente. \u00c0 la fin du temps de cuisson, augmentez la chaleur \u00e0 425 \u00b0F (220 \u00b0C). Laissez cuire encore 30\u00a0minutes pour que la peau devienne croustillante.<\/p>\r\n<p>&nbsp;<\/p>\r\n<p>Un peu avant la fin de la cuisson, pr\u00e9parez le riz au lait de coco. Pour cela, faites fondre l\u2019huile de coco dans une grande casserole. Versez ensuite le riz puis salez et poivrez. Laissez rissoler une minute et ajoutez 2\u00a0tasses (500\u00a0ml) de lait de coco, ainsi que l\u2019eau. Couvrez et laissez cuire \u00e0 feu doux jusqu\u2019\u00e0 ce que tous les liquides soient absorb\u00e9s.<\/p>\r\n<p>&nbsp;<\/p>\r\n<p>En fin de cuisson, ajoutez le reste (\u00bc tasse) du lait de coco.<\/p>\r\n<p>&nbsp;<\/p>\r\n<p>Lorsque la viande est pr\u00eate, sortez-la du four et r\u00e9cup\u00e9rez-en le jus dans une casserole. Faites r\u00e9duire le jus \u00e0 feu doux, en ajoutant le ketchup, la moutarde et le sucre.<\/p>\r\n<p>&nbsp;<\/p>\r\n<p>Servez le riz avec la viande et nappez de sauce.
