Retirez la po\u00eale du feu et incorporez le vinaigre et la moutarde en fouettant. Avec un couteau tranchant, coupez l&rsquo;\u00e9corce et la moelle du pamplemousse et d\u00e9tachez les quartiers des membranes. Coupez grossi\u00e8rement le fruit. Taillez les tiges de fenouil pr\u00e8s du bulbe et coupez le bulbe dans le sens de la longueur en tranches tr\u00e8s fines. Taillez et jetez le noyau des tranches. Tranchez finement le radicchio rouge.
