\u00e9conome pour enlever le zeste, puis \u00e9mincez le zeste en fines lani\u00e8res.Pressez 4 pamplemousses de Floride et faites cuire le zeste dans le jus pendant 10 minutes.\u00c9gouttez et r\u00e9servez.Pelez les pamplemousses restants proprement, puis d\u00e9tachez la pulpe des quartiers \u00e0 l&rsquo;aide d&rsquo;un petit couteau de cuisine et coupez-la en trois.M\u00e9langez les morceaux avec le zeste.Portez \u00e0 \u00e9bullition 240\u00a0ml de liquide de cuisson du zeste, puis incorporez la g\u00e9latine, qui a \u00e9t\u00e9 ramollie dans de l&rsquo;eau
