Couper le bulbe de fenouil en deux, puis en tranches aussi fines que possible. Arroser le fenouil d&rsquo;un filet d&rsquo;huile d&rsquo;olive et l&rsquo;assaisonner de sel et de poivre au go\u00fbt. D\u00e9chirer 2 feuilles de papier-parchemin et placer la moiti\u00e9 des \u00e9pinards au centre de chaque feuille. 2. R\u00e9partir le fenouil et placer les tranches de pamplemousse de la Floride sur le dessus. 3. Ajouter une tranche de beurre sur chaque portion. D\u00e9poser les filets de bar sur le lit de fenouil, c\u00f4t\u00e9 peau vers le haut. 4. Ajouter un filet d&rsquo;huile d&rsquo;olive avant de replier le papier pour former un paquet, en n&rsquo;oubliant pas de rabattre les extr\u00e9mit\u00e9s sous le paquet. 5.
