M\u00e9langer le jus et le zeste de pamplemousse de la Floride. 2. Battre les \u0153ufs et le sucre dans une casserole non r\u00e9active (ne pas utiliser de bol ni de casserole en aluminium). 3. Ajouter le beurre, le jus et le zeste de pamplemousse de la Floride. Porter le m\u00e9lange \u00e0 \u00e9bullition et laisser mijoter jusqu\u2019\u00e0 ce qu\u2019il \u00e9paississe. 4. Passer le caill\u00e9 au tamis pour retirer le zeste puis r\u00e9frig\u00e9rer dans un contenant herm\u00e9tique. Se conserve au r\u00e9frig\u00e9rateur pendant 5 \u00e0 7 jours. <strong><em>Pour la cr\u00e8me fra\u00eeche \u00e0 la noix de coco\u00a0:<\/em><\/strong> 1. M\u00e9langer les cr\u00e8mes dans un bol en acier inoxydable, couvrir et conserver \u00e0 la temp\u00e9rature de la pi\u00e8ce (id\u00e9alement, entre 27 \u00e0 32\u00a0\u00b0C) pendant 24\u00a0heures. Apr\u00e8s 24\u00a0heures, r\u00e9frig\u00e9rer. 2. Ajouter la noix de coco et bien m\u00e9langer. 3. Pour servir, verser le caill\u00e9 au pamplemousse de la Floride dans un bol et placer des tranches de mangue sur le dessus. 4. D\u00e9poser une cuill\u00e9r\u00e9e de cr\u00e8me fra\u00eeche \u00e0 la noix de coco sur le dessus et servir avec des biscuits faits maison ou d&rsquo;autres fruits.
