Tamiser la farine et le sucre glace dans un bol \u00e0 m\u00e9langer. 2. Ajouter le zeste des pamplemousses de la Floride. 3. Masser le beurre dans le m\u00e9lange de farine jusqu\u2019\u00e0 ce que la texture ressemble \u00e0 celle d\u2019un crumble. Transf\u00e9rer le crumble sur une surface de travail bien propre. Travailler le crumble jusqu&rsquo;\u00e0 l&rsquo;obtention d&rsquo;une p\u00e2te, puis rouler en forme de cylindre d&rsquo;environ 5\u00a0cm de diam\u00e8tre et placer au r\u00e9frig\u00e9rateur pendant 1\u00a0heure. 4. Sortir la p\u00e2te \u00e0 biscuits cylindr\u00e9e du r\u00e9frig\u00e9rateur et la couper en disques d\u2019environ 2\u00a0cm de large. D\u00e9poser les disques sur une plaque \u00e0 biscuits. 5. Laisser les biscuits reposer \u00e0 la temp\u00e9rature de la pi\u00e8ce pendant environ 15 \u00e0 20 minutes, puis utiliser le pouce pour faire une empreinte creuse sur le dessus de chaque biscuit. 6. Faire cuire dans un four pr\u00e9chauff\u00e9 \u00e0 350\u00a0\u00b0F (175\u00a0\u00b0C) pendant 12\u00a0\u00e0 15 minutes ou jusqu\u2019\u00e0 ce que les biscuits soient dor\u00e9s. Retirer les biscuits du four et laisser reposer pour 10 minutes. D\u00e9poser ensuite une petite cuill\u00e9r\u00e9e de caill\u00e9 au pamplemousse de la Floride sur le dessus de chaque biscuit. <strong><em>Pour <\/em><\/strong><strong><em>le caill\u00e9 au pamplemousse de la Floride\u00a0:<\/em><\/strong> 1. M\u00e9langer le jus et le zeste de pamplemousse de la Floride. 2. Battre les \u0153ufs et le sucre dans une casserole non r\u00e9active (ne pas utiliser de bol ni de casserole en aluminium). 3. Ajouter le beurre, le jus et le zeste de pamplemousse de la Floride. Porter le m\u00e9lange \u00e0 \u00e9bullition et laisser mijoter jusqu&rsquo;\u00e0 ce qu&rsquo;il \u00e9paississe. 4. Passer le caill\u00e9 au tamis pour retirer le zeste puis r\u00e9frig\u00e9rer dans un contenant herm\u00e9tique. Se conserve au r\u00e9frig\u00e9rateur pendant 5 \u00e0 7\u00a0jours.
