Couper la lime en deux et en presser le jus directement sur l\u2019oignon. R\u00e9server.<\/p>\r\n\r\n\r\n\r\n<p><strong><em>Pour la sauce au pamplemousse de la Floride\u00a0:<\/em><\/strong><\/p>\r\n\r\n\r\n\r\n<p>Laver le pamplemousse de la Floride et en retirer du zeste (environ 1 cuill\u00e8re \u00e0 th\u00e9). Couper le pamplemousse et en presser le jus dans un bol.<\/p>\r\n\r\n\r\n\r\n<p>Combiner les jaunes d\u2019\u0153ufs, la moutarde et l\u2019estragon au jus de pamplemousse.<\/p>\r\n\r\n\r\n\r\n<p>Faire fondre le beurre jusqu\u2019\u00e0 ce qu\u2019il commence \u00e0 former des bulles puis le verser lentement sur le m\u00e9lange de jaune d\u2019\u0153ufs et de jus de pamplemousse en fouettant jusqu\u2019\u00e0 ce que le m\u00e9lange prenne la texture homog\u00e8ne d\u2019une sauce. Lorsque la sauce a \u00e9paissi, l&rsquo;assaisonner d\u2019un peu de poivre. R\u00e9server.<\/p>\r\n\r\n\r\n\r\n<p><strong><em>Pour les hamburgers au saumon\u00a0:<\/em><\/strong><\/p>\r\n\r\n\r\n\r\n<p>Placer le saumon dans un robot culinaire avec l\u2019ail, le gingembre et le persil. Assaisonner d\u2019un peu de sel. M\u00e9langer jusqu\u2019\u00e0 ce que le m\u00e9lange prenne la texture d\u2019un hachis.<\/p>\r\n\r\n\r\n\r\n<p>Avec les mains pr\u00e9alablement mouill\u00e9es, fa\u00e7onner le hachis en 4\u00a0portions \u00e9gales et former des boulettes.<\/p>\r\n\r\n\r\n\r\n<p>Faire chauffer l\u2019huile v\u00e9g\u00e9tale dans une po\u00eale \u00e0 frire et y cuire les boulettes environ 4-5 minutes de chaque c\u00f4t\u00e9.<\/p>\r\n\r\n\r\n\r\n<p>Lorsque les boulettes sont cuites, les d\u00e9poser sur le pain brioch\u00e9, napper de sauce au pamplemousse de la Floride et \u00e0 l\u2019estragon.
