{"id":293,"date":"2018-05-28T18:41:41","date_gmt":"2018-05-28T22:41:41","guid":{"rendered":"https:\/\/www.floridacitrus.quebec\/grapefruit\/?post_type=fdoc-recipe&#038;p=293"},"modified":"2024-06-15T09:11:42","modified_gmt":"2024-06-15T13:11:42","slug":"recette-de-mahi-mahi-avec-salade-de-chou-a-lorange-grillee","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.quebec\/grapefruit\/recipes\/recette-de-mahi-mahi-avec-salade-de-chou-a-lorange-grillee\/","title":{"rendered":"Recette de Mahi-mahi avec salade de chou \u00e0 l&rsquo;orange grill\u00e9e"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>250\u00a0ml de jus d&rsquo;orange de Floride<\/li>\r\n<li>8 oranges de Floride coup\u00e9es en deux<\/li>\r\n<li>3 cuill\u00e8res \u00e0 caf\u00e9 d&rsquo;huile d&rsquo;olive<\/li>\r\n<li>1\/4 tasse (25 g) d&rsquo;\u00e9chalotes hach\u00e9es<\/li>\r\n<li>125\u00a0ml de vin blanc<\/li>\r\n<li>1\/2 tasse (125 ml) de cr\u00e8me fra\u00eeche \u00e9paisse<\/li>\r\n<li>1 b\u00e2tonnet (110 g) de beurre non sal\u00e9 \u00e0 temp\u00e9rature ambiante<\/li>\r\n<li>4 Mahi-mahi coup\u00e9s en morceaux de 170\u00a0g<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<p>Salade de chou\u00a0:<\/p>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>1 tasse (200 g) de quartiers d&rsquo;orange de Floride<\/li>\r\n<li>1\/2 tasse(100 g) de quartiers de pamplemousse de Floride<\/li>\r\n<li>1\/2 tasse (50 g) de chou rouge finement \u00e9pluch\u00e9<\/li>\r\n<li>1\/2 tasse (50 g) de chou napa finement \u00e9pluch\u00e9<\/li>\r\n<li>1\/2 tasse (175 g) de poivron jaune coup\u00e9 en fines lani\u00e8res<\/li>\r\n<li>Sel<\/li>\r\n<li>Poivre<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Pr\u00e9paration<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Dans un gril sur feu vif, faites griller les oranges qui ont \u00e9t\u00e9 coup\u00e9es en deux.Une fois qu&rsquo;elles sont grill\u00e9es, retirez-les et r\u00e9servez-les.<\/p>\r\n<p><br \/>Dans une casserole d&rsquo;1 litre, faites r\u00e9duire le jus d&rsquo;orange \u00e0 60\u00a0ml.Laissez refroidir.<\/p>\r\n<p><br \/>Dans une autre casserole d&rsquo;1 litre, ajoutez 1 cuill\u00e8re \u00e0 caf\u00e9 d&rsquo;huile d&rsquo;olive et les \u00e9chalotes hach\u00e9es.Faites-les cuire jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient translucides, environ 1-2 minutes.Ajoutez le vin blanc et faites-le r\u00e9duire jusqu&rsquo;\u00e0 ce qu&rsquo;il soit presque totalement \u00e9vapor\u00e9.Ajoutez la cr\u00e8me \u00e9paisse et faites r\u00e9duire de moiti\u00e9.Pressez 4 des oranges grill\u00e9es dans la cr\u00e8me \u00e9paisse et faites r\u00e9duire pendant encore 2 minutes.Incorporez le beurre au fouet et r\u00e9servez au-dessus d&rsquo;un bain-marie chaud.<\/p>\r\n<p><br \/>Dans un bol en inox, m\u00e9langez le jus d&rsquo;orange r\u00e9duit refroidi avec les ingr\u00e9dients de la salade.Ajoutez 1\/4 cuill\u00e8re \u00e0 caf\u00e9 de sel, m\u00e9langez et gardez au frais.<br \/>Dans une sauteuse, \u00e0 feu moyen-vif, ajoutez 2 cuill\u00e8res \u00e0 caf\u00e9 d&rsquo;huile d&rsquo;olive et laissez l&rsquo;huile atteindre son point de fum\u00e9e.Salez et poivrez le mahi-mahi, puis saisissez-le c\u00f4t\u00e9 chair dans la po\u00eale pendant 1 minute.Retournez le poisson, baissez le feu et faites cuire jusqu&rsquo;\u00e0 ce que le poisson soit bien cuit, 4-5 minutes.Placez le poisson sur la plaque.R\u00e9partissez \u00e9galement la salade de chou aux agrumes sur le dessus.D\u00e9posez 2 cuill\u00e8res \u00e0 soupe de beurre blanc autour du poisson et garnissez d&rsquo;une orange grill\u00e9e.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n","protected":false},"excerpt":{"rendered":"<p>&nbsp;
