{"id":319,"date":"2018-05-28T20:27:08","date_gmt":"2018-05-29T00:27:08","guid":{"rendered":"https:\/\/www.floridacitrus.quebec\/grapefruit\/?post_type=fdoc-recipe&#038;p=319"},"modified":"2024-06-15T08:48:03","modified_gmt":"2024-06-15T12:48:03","slug":"sorbet-de-pamplemousse-rouge-et-campari-avec-mangue-fruit-de-la-passion-et-poivron-doux","status":"publish","type":"fdoc-recipe","link":"https:\/\/www.floridacitrus.quebec\/grapefruit\/recipes\/sorbet-de-pamplemousse-rouge-et-campari-avec-mangue-fruit-de-la-passion-et-poivron-doux\/","title":{"rendered":"Sorbet de pamplemousse rouge et Campari avec mangue, fruit de la passion et poivron doux"},"content":{"rendered":"\r\n<p>&nbsp;<\/p>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Ingr\u00e9dients<\/h2>\r\n\r\n\r\n\r\n<ul class=\"wp-block-fdoc-recipe-ingredients\">\r\n<li>375\u00a0ml de jus de pamplemousse rouge de Floride fra\u00eechement press\u00e9 et filtr\u00e9<\/li>\r\n<li>1 tasse (200 g) de sucre<\/li>\r\n<li>375\u00a0ml d&rsquo;eau<\/li>\r\n<li>115\u00a0ml de Campari<\/li>\r\n<li>1 blanc d\u2019\u0153uf<\/li>\r\n<li>Machine \u00e0 glace ou moule \u00e0 glace<\/li>\r\n<li>1 gros poivron rouge<\/li>\r\n<li>Quelques gouttes d&rsquo;huile d&rsquo;olive<\/li>\r\n<li>Jus d&rsquo;une orange de Floride, filtr\u00e9<\/li>\r\n<li>125\u00a0ml de porto blanc<\/li>\r\n<li>Moelle d&rsquo;1 gousse de vanille<\/li>\r\n<li>1\/2 gousse de vanille<\/li>\r\n<li>2 morceaux de fruit de la passion<\/li>\r\n<li>1 mangue m\u00fbre<\/li>\r\n<\/ul>\r\n\r\n\r\n\r\n<h2 class=\"wp-block-heading\">Pr\u00e9paration<\/h2>\r\n\r\n\r\n\r\n\r\n\r\n<div class=\"wp-block-fdoc-recipe-instructions\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Pour pr\u00e9parer le sorbet, placez l&rsquo;eau et le sucre dans un moule haut et \u00e9troit.Portez le m\u00e9lange \u00e0 \u00e9bullition et laissez-le sur feu moyen jusqu&rsquo;\u00e0 ce que tout le sucre ait fondu.Laissez refroidir \u00e0 temp\u00e9rature ambiante.<\/p>\r\n<p><br \/>Pr\u00e9levez 450\u00a0ml de sirop de sucre, ajoutez le jus de pamplemousse et le Campari, puis m\u00e9langez bien.V\u00e9rifiez la densit\u00e9 du sucre \u00e0 64 degr\u00e9s et si n\u00e9cessaire, ajoutez de l&rsquo;eau froide jusqu&rsquo;\u00e0 ce que la bonne temp\u00e9rature soit atteinte.Congelez le m\u00e9lange dans une machine \u00e0 glace.Ensuite, ajoutez de la mousse de blanc d&rsquo;\u0153uf au sorbet quand il est l\u00e9g\u00e8rement congel\u00e9 et laissez la machine m\u00e9langer jusqu&rsquo;\u00e0 ce que le sorbet ait la solidit\u00e9 d\u00e9sir\u00e9e.Dans un bol non graiss\u00e9, battez le blanc d&rsquo;\u0153uf avec le sucre jusqu&rsquo;\u00e0 obtenir une mousse ferme.<\/p>\r\n<p><br \/>Pour pr\u00e9parer le poivron, pr\u00e9chauffez le four \u00e0 180\u00a0\u00b0C.Enveloppez le poivron dans une double feuille d&rsquo;aluminium et faites-le \u00ab\u00a0r\u00f4tir\u00a0\u00bb au four pendant 35 minutes.Laissez refroidir pendant 15 minutes toujours envelopp\u00e9 de papier alu.Sortez le poivron du papier alu, piquez un trou au fond et laissez l&rsquo;humidit\u00e9 s&rsquo;\u00e9vaporer.Retirez la tige, les graines et les membranes restantes.Ensuite, \u00e0 l&rsquo;aide d&rsquo;un couteau, \u00e9pluchez le poivron et coupez le fruit en lani\u00e8res \u00e9gales.Pr\u00e9chauffez une po\u00eale en t\u00e9flon avec quelques gouttes d&rsquo;huile d&rsquo;olive, placez-y les tranches de poivron et laissez \u00e9vaporer tout le liquide.Ajoutez le porto blanc, la cannelle, la vanille et le jus d&rsquo;orange, et laissez \u00e0 feu doux pendant 2-3 minutes.<\/p>\r\n<p><br \/>Pour finir, pelez la mangue.Coupez la mangue en deux aussi pr\u00e8s que possible du noyau.Coupez les morceaux en tranches fines.Les restes de mangue peuvent \u00eatre mis dans le mixeur et seront utilis\u00e9s pour la sauce.Ensuite, coupez les fruits de la passion en deux et retirez les graines.Mettez la mangue, le fruit de la passion et le poivron sur des assiettes, puis ajoutez une boule de sorbet au pamplemousse.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n","protected":false},"excerpt":{"rendered":"<p>&nbsp;
