Incorporez le vinaigre de cidre petit \u00e0 petit, en go\u00fbtant pour v\u00e9rifier que le sucre et le vinaigre sont \u00e9quilibr\u00e9s. R\u00e9servez au chaud.\u00a0<\/p>\r\n<p>Dans une casserole de 4\u00a0litres, placez les panais, les pommes de terre et le lait. Couvrez avec de l&rsquo;eau 5\u00a0cm au-dessus des l\u00e9gumes et faites bouillir.\u00a0<\/p>\r\n<p>Lorsque les panais sont bien cuits et tendres, \u00e9gouttez-les, passez-les au presse-pur\u00e9e, incorporez le beurre, salez et poivrez. R\u00e9servez au chaud.\u00a0<\/p>\r\n<p>M\u00e9langez le zeste de pamplemousse, la gousse de vanille et la chapelure panko. Disposez le m\u00e9lange sur une plaque recouverte de papier sulfuris\u00e9 et faites cuire dans un four pr\u00e9chauff\u00e9 \u00e0 160\u00a0\u00b0C jusqu&rsquo;\u00e0 ce que la chapelure soit bien dor\u00e9e, environ 15 \u00e0 18 minutes.\u00a0<\/p>\r\n<p>Dans une sauteuse \u00e0 feu moyen, ajoutez 3 cuill\u00e8res \u00e0 soupe d&rsquo;huile d&rsquo;olive. Quand elle commence \u00e0 fumer, ajoutez les coquilles Saint-Jacques. Saisissez un c\u00f4t\u00e9 jusqu&rsquo;\u00e0 ce qu&rsquo;il soit dor\u00e9, puis retournez les coquilles Saint-Jacques et versez la r\u00e9duction de jus de pamplemousse et d&rsquo;\u00e9chalotes \u00e0 la cuill\u00e8re par-dessus. Arrosez les coquilles Saint-Jacques jusqu&rsquo;\u00e0 la cuisson d\u00e9sir\u00e9e.\u00a0<\/p>\r\n<p>R\u00e9partissez \u00e9galement la pur\u00e9e de panais au centre de chaque assiette. D\u00e9posez les coquilles Saint-Jacques sur la pur\u00e9e.
