Ajoutez le jus d&rsquo;orange, le vinaigre de x\u00e9r\u00e8s et le sirop de gingembre, puis laissez-le tout se concentrer en un sirop. Ajoutez les carottes et laisser chauffer doucement pendant 3 \u00e0 4 minutes.\u00a0<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Pour les crevettes\u00a0:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>Faites bouillir le jus de pamplemousse blanc avec les feuilles de laurier et l&rsquo;ail dans un cuit-vapeur. Gardez le jus \u00e0 peine en dessous du niveau d&rsquo;\u00e9bullition. Mettez les crevettes dans le cuit-vapeur et suspendez-les au-dessus du jus de pamplemousse. Mettez le couvercle. Laissez cuire les crevettes \u00e0 la vapeur 4-5 minutes jusqu&rsquo;\u00e0 ce qu&rsquo;elles soient presque cuites, puis \u00e9teignez le feu.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__title\">Pour le sabayon\u00a0:<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p><br \/>Pendant ce temps, battez les jaunes d&rsquo;\u0153ufs. Disposez une casserole avec un bol (au bain-marie), remplissez le bol d&rsquo;un tiers d&rsquo;eau et portez \u00e0 \u00e9bullition. Baissez le feu. Battez les jaunes d&rsquo;\u0153ufs avec le porto, le jus et le zeste de pamplemousse rouge dans un bol. Mettez le bol sur la casserole avec de l&rsquo;eau presque bouillante et continuez \u00e0 remuer (5 \u00e0 7 minutes) jusqu&rsquo;\u00e0 ce qu&rsquo;une sauce mousseuse l\u00e9g\u00e8re et ferme apparaisse. Salez et poivrez selon le go\u00fbt. N&rsquo;oubliez pas de remuer constamment, sinon vous finirez avec des \u0153ufs brouill\u00e9s.<\/p>\r\n<\/div>\r\n<\/div>\r\n<\/div>\r\n<div class=\"wp-block-fdoc-recipe-instructions-step\">\r\n<div class=\"wp-block-fdoc-recipe-instructions-step__text\">\r\n<div>\r\n<p>M\u00e9langez la roquette avec les carottes.
