Placer les biftecks de c\u00f4te dans un plat de cuisson; verser le m\u00e9lange de jus d&rsquo;orange sur la viande et laisser mariner au r\u00e9frig\u00e9rateur pendant au moins 30 minutes, ou jusqu\u2019\u00e0 3 heures au plus.<br \/><br \/><\/p>\r\n\r\n\r\n\r\n<p>Pr\u00e9chauffer le gril \u00e0 feu moyen-\u00e9lev\u00e9. Placer les poivrons rouges et jaunes et les piments Anaheim et poblano sur le gril; griller jusqu&rsquo;\u00e0 ce qu&rsquo;ils soient grill\u00e9s et noircis de tous les c\u00f4t\u00e9s. Placer les poivrons et les piments dans un bol; les couvrir d&rsquo;un film plastique pendant 5 minutes. Retirer la peau grill\u00e9e et toutes les graines puis hacher grossi\u00e8rement les poivrons et les piments.<br \/><br \/><\/p>\r\n\r\n\r\n\r\n<p>Dans un bol, m\u00e9langer les poivrons et les piments hach\u00e9s, les quartiers d&rsquo;orange, les quartiers de pamplemousse, l&rsquo;oignon, la coriandre, le jus de citron vert, l&rsquo;huile d&rsquo;olive et le zeste d&rsquo;orange; bien m\u00e9langer et r\u00e9server.<br \/><br \/><\/p>\r\n\r\n\r\n\r\n<p>Assaisonner les biftecks de c\u00f4te de b\u0153uf avec du sel et du poivre, au go\u00fbt. Faire griller \u00e0 feu vif jusqu&rsquo;\u00e0 cuisson souhait\u00e9e. Retirer du gril et laisser reposer 3 \u00e0 4 minutes.
